Today we have broccoli pancakes.


Broccoli may not be the first vegetable that comes to mind when you think of crispy fritters, but this recipe proves otherwise.


With feta and mozzarella, the vegetarian dish becomes the star of any crispy party.

When delicious and healthy meet, the result is a snack that impresses young and old.

There's even more brok n' roll with the ham and broccoli lasagne and a broccoli-mushroom rice noodle pan.

Both great variations that bring out the best in this green wonder vegetable!

It's so easy to prepare the broccoli fritters:

You only need a few ingredients for the broccoli fritters:

  • Yoghurt dip:

  • 200g yogurt

  • 3 tbsp chives, cut into rolls

  • 20 ml lemon juice

  • 0.5 tsp garlic powder

  • 0.5 tsp pepper

  • 0.5 tsp salt

  • Broccoli pancakes:

  • 200g broccoli, cooked and diced

  • 3 eggs, whisked

  • 100g flour

  • 100 g mozzarella, grated

  • 100g feta, crumbled

  • 20 g dill, chopped

  • 2 cloves of garlic, minced

  • 0.5 tsp paprika powder

  • 0.5 tsp pepper

  • 0.5 tsp salt

  • Aside from that:

  • dill, to taste

Preparation is so easy:

  • For the yogurt dip:

    In a small bowl, stir together yogurt, chives, lemon juice, garlic powder, salt and pepper.

  • For the broccoli fritters:

    Cook broccoli in salted water until al dente, then chop and let cool.

    Mix in a bowl with eggs, flour, mozzarella, feta, dill, garlic, paprika, pepper and salt.

  • Place a heaped tablespoon of the mixture in a hot pan with oil and press flat.

    Fry on both sides for about five to seven minutes.

  • Serve with the yogurt dip and garnish with dill if desired.

  • Enjoy.
