This recipe makes my Swabian ❤️ beat faster.

Onion Rostbraten (or “Zwiebelroschdbrate”, as I say) is a real southern German classic that should not be missing in any Swabian restaurant.


The side dish changes from simple farmer's bread to fried potatoes or to spaetzle or cheese spaetzle.

With the latter you really have to be hungry 😅.


A good onion roast consists of a tender piece of beef, fried as desired, crispy onion rings and a delicate “sauce” – and please not too little of it.

That's how it's done:

You need these ingredients:

  • Steaks:

  • 2 tbsp cooking oil

  • 500 g rump steak (2 × 250 g)

  • Salt

  • pepper

  • Bratensauce:

  • 50g butter

  • 100g onion, diced

  • 0.5 tsp salt

  • 15g wheat flour

  • 150 ml red wine

  • 200 ml beef stock

  • Roasted onions:

  • 500 g onions, cut into rings

  • 10 g sweet paprika powder

  • 10g salt

  • 80g wheat flour

  • Oil for deep frying

The preparation is easier than expected:

  • Preheat oven to 80 °C fan oven.

  • For the steaks:

    Pat the beef steaks dry and season with salt and pepper.

    Heat cooking oil in a pan.

    Sear the steaks on each side.

    Remove from pan and place on a rack.

    Cook in the preheated oven for about 40-45 minutes until the desired doneness (tip: a core temperature meter is worth its weight in gold here).

  • For the gravy:

    Melt butter in the base of the pan and fry the onion cubes in it.

    Salt and dust with wheat flour.

    Fry, then deglaze with red wine and beef stock.

    Simmer until the sauce begins to thicken.

    Keep warm.

  • For the fried onions:

    Mix the onion rings with paprika powder, salt and wheat flour well.

    Fry the onion rings in a small pot until golden brown.

    Drain on kitchen paper.

  • Serve beef steaks with sauce and fried onions.

    Fried potatoes and spaetzle go well with it.
