Rice pudding is a real comfort food that brings back memories of childhood: a time when mom or grandma cooked us the dessert.
If you want to bring that homely feeling back to your plate, you need a little time and, above all, patience.
Although it is a simple dish, rice pudding is notorious for burning, clumping or undercooking.
With a few tricks - and a special ingredient - you can create a delicious rice pudding that tastes like grandma's cooking.
Rice pudding probably comes from Italy
Short grain rice is always used for rice pudding.
The grains of these varieties are short and rounded and are additionally ground after harvest.
This means they absorb a lot of liquid and can cook evenly.

It's that easy to cook grandma's chicken fricassee with colorful vegetables
0.5 liter milk (replace with plant milk for a vegan version)
125 grams of short-grain rice (also labeled as “rice pudding” in the supermarket)
1 tablespoon sugar
A pinch of salt
Half a packet of vanilla pudding powder
You should plan around 40 minutes for the preparation.
The rice is boiled together with the milk and then left to simmer for half an hour.
Meanwhile, the rice grains release their starch into the milk, which thickens the rice and gives it its creamy consistency.
Pay attention to the heat when preparing
It is important to add the pudding powder at the end and then bring the rice to the boil again.
Otherwise the porridge could possibly become too tough.
The preparation takes place in five steps:
Take three tablespoons of the milk and set aside.
Bring the remaining milk, salt and sugar to the boil in a saucepan.
Stir in the rice pudding and let it simmer over low heat for 30-35 minutes.
Shortly before the end of the time, stir the three tablespoons of milk with the pudding powder until smooth.
Remove the pot from the heat and stir in the pudding powder.
Bring the rice pudding to the boil again briefly.
The biggest mistake most people make when preparing food is using too much heat.
If the temperature on the stove is too high, the rice grains will burn instead of being cooked from the inside.
In addition, the milk sugar reacts with the protein, causing the mass to stick to the bottom.
It is better to keep the heat in the medium range when boiling.
Then you should turn down the heat and put a lid on.
Prepare and store the rice pudding
In an interview with the
German Press Agency,
cookbook author Kerstin Niehoff advises setting a timer for the cooking time "so that the rice pudding doesn't burn while you relax."
It's best to let the timer expire shortly beforehand so that you can stir regularly at the end of the cooking time.
