Formaticum, the market exhibition of Italian cheese and dairy rarities, returns to Rome on Saturday 2nd and Sunday 3rd March.
The event, set up at the Città dell'Altra Economia, includes tastings, seminars and quality awards.
New to the 2024 edition is the "challenge" between the producers present: each of them will be able to choose a product, which will be evaluated by a jury made up of master tasters from the Onaf delegation (National Organization of Cheese Tasters) of Rome, for the awarding of a quality recognition.
The creators of the market exhibition are La Pecora Nera Editore - a publishing house active in the world of food and wine, specialized in the creation of guides and events, and Vincenzo Mancino, an expert in the production and processing of dairy products.
"We at Formaticum - states Vincenzo Mancino - have clear ideas, we have always chosen to be the voice or, better, the cry of the artisans, their skills, their professionalism cannot be replaced by any machine.
The use of machines in agriculture has favored the development of all humanity but, today, it is becoming a threat to that knowledge which is the very essence of the final product, mass producing semi-finished products, in every food sector".
"The intuition - comment Simone Cargiani and Fernanda D'Arienzo of La Pecora Nera - of creating an event entirely dedicated to cheese and the artisans who produce it proved to be right. We have arrived at this fifth edition with a growing following, over 2,000 attendance only in the last one, a sign that the formula is popular, a low entry ticket that entitles you to taste over 200 cheeses and discover that there is a world of flavors and traditions that deserve to be known".
