This oriental couscous salad tastes wonderfully fresh.

Today we have tabbouleh, olé!
For a bad rhyme, I'm happy to accept that an obviously Spanish exclamation is mixed with an oriental recipe.
What do they both have in common?
Actually nothing, but it rhymes so beautifully 😅.
What's also nice about this recipe is the special trick: for a particularly aromatic taste, the couscous is not soaked in vegetable broth, but in peppermint tea.
That's how it's done:
You need these ingredients:
Couscous:
300g couscous
0.5 tsp salt
1 bag of peppermint tea
500 ml water
Dressing:
0.5 lemon, squeezed
2 tbsp olive oil
0.5 tsp salt
0.5 tsp pepper
1 garlic clove, minced
Aside from that:
2 tomatoes, diced
0.5 cucumber, diced
1 red onion, diced
8 tbsp parsley, chopped
4 tbsp mint, chopped
4 tbsp pomegranate seeds
The preparation is simple:
For the couscous:
Bring water to the boil and let the tea bags steep in it for 5 minutes.
Mix hot mint tea with couscous and 0.5 teaspoon salt.
Cover and let sit for 5 minutes until the couscous has absorbed the liquid.
For the dressing:
mix all the ingredients together.
Mix couscous, tomatoes, cucumber, onion, parsley, mint and pomegranate seeds in a salad bowl.
Pour dressing over it and mix again.
Soooo good!
Tip:
the salad becomes truly authentic with large amounts of flat-leaf parsley and mint.
For a more pleasant mouthfeel, you can leave the parsley leaves whole and not chop them finely.
The parsley stems can be used.
