  • 2 tbsp clarified butter

  • 5 cloves

  • 2 bay leaves

  • 2 tbsp sugar

  • 1 tsp salt

  • Fresh pepper

  • 2 tbsp apple cider vinegar

The preparation is simple:

  • Clean and wash the red cabbage, remove the stalk and cut or slice into strips.

    Wash the apple, peel it, halve it, remove the core and cut into cubes.

    Halve, peel and finely dice the onions.

  • Heat clarified butter in a large pot and sauté the red cabbage with the onions for five minutes.

    Add cloves, bay leaves and apple pieces.

    Fill with water and simmer covered over low heat for about an hour.

    Stir occasionally.

  • Remove bay leaves and cloves.

    Season to taste with salt, pepper, sugar, apple cider vinegar and blackcurrant jelly.
