In addition to the classic Kaiserschmarrn with applesauce, a freshly baked apple strudel with vanilla sauce is one of the absolute favorite desserts during a cozy hut fun in the mountains.
But do you really have to wait for your next ski holiday to enjoy it?
Absolutely not!
Apple strudel with vanilla sauce, a traditional Austrian pastry, is also easy to make at home.

Apple strudel offers a multitude of possibilities for variation and creativity.
In addition to the classic large apple strudel, there are also mini apple strudel with vanilla sauce, which are perfect for parties or as finger food for a little hunger in between.
These little treats are just as delicious as their larger counterpart, but are hand-sized for easier enjoyment.
Another popular variant are apple cinnamon spring rolls, which present the taste of apple strudel in crispy rolls.
You need these ingredients for a classic apple strudel with vanilla sauce:
The apple strudel recipe is a classic and popular dessert consisting of thin dough, sweet apples, spices and nuts.

Pastry:
250 g flour
1 pinch of salt
1 tbsp oil
150 ml water, lukewarm
1 tbsp butter, melted
Apple filling:
4 large apples (tart apple varieties, such as Boskoop or Granny Smith)
Juice of half a lemon
100g sugar
1 tsp cinnamon
50 g almonds or walnuts, chopped
Raisins (optional)
Vanilla sauce:
250 ml milk
1 vanilla bean (or vanilla extract)
2 egg yolks
50g sugar

Thanks to the step-by-step instructions, apple strudel is easy to make:
Preheat the oven to 180 °C top/bottom heat.
For the strudel dough:
Sift flour into a bowl and add a pinch of salt.
Add oil and lukewarm water and knead into a smooth dough.
Form the dough into a ball, brush with a little oil and let it rest, covered, for about 30 minutes.
For the apple filling:
Peel the apples, core them and cut them into thin slices.
Drizzle with lemon juice to prevent browning.
Add sugar, cinnamon, chopped nuts and optional raisins and mix well.
Roll out the strudel dough very thinly on a floured work surface until it is almost transparent.
Spread the apple mixture evenly over the rolled out dough, leaving some space at one end to seal the strudel.
Brush the edges of the dough with melted butter.
Carefully roll up the dough from the filled side until a compact roll is formed.
Seal the ends tightly and place the strudel, seam side down, on a baking tray lined with baking paper.
Bake the apple strudel in the preheated oven until golden brown, about 30-40 minutes, until crispy.
For the vanilla sauce:
Heat milk in a saucepan.
Cut the vanilla pod lengthwise and scrape out the pulp.
Add the pulp and pod to the milk and bring to the boil briefly.
In a separate bowl, beat egg yolks and sugar until creamy.
Slowly pour the hot milk into the egg yolk mixture, stirring constantly.
Pour the mixture back into the pot and let it thicken over low heat, stirring constantly, until it reaches a creamy consistency.
Cut the apple strudel into slices and serve warm with the homemade vanilla sauce.
