Fish fingers are particularly popular with children.

Stiftung Warentest is now providing findings that are anything but convincing - on the contrary.

Quickly prepared and popular with many people: fish fingers are – like the delicious mustard – a real classic in German kitchens.

The fish pieces can be served alone or with a variety of side dishes - from mashed potatoes to fries to vegetables.

has now taken a closer look at 19 suppliers of frozen fish sticks - with some shocking results.

Vegan fish fingers only taste partly like fish

On its homepage ,

explains that it chose eleven classic fish sticks, four fried fish sticks and four vegan products “type fish sticks” for the tests (issue 3/2024).

The vegan sticks were filled differently: two products were based on soy, one on rice with wheat and one on a mix of jackfruit with vegetables.

In terms of taste, only two of the four products would remind you of fish.

Fish fingers – served here with mashed potatoes – are particularly popular with children.

However, many manufacturers performed poorly at Stiftung Warentest.

The testers carried out a detailed pollutant analysis on the 19 products.

Although no product poses an acute danger to the consumer, “we rate nine products as sufficient in the pollutant assessment, two as inadequate,” explains the foundation on its homepage.

These also included vegan variants.

Two products were highly contaminated with so-called 3-MCPD esters, nine others had elevated levels.

In total: eleven out of 19 products contain harmful substances.

However, only two products were rated “Good” – the fish fingers from “Frosta” and “Alnatura”.

Alternative: prepare fish fingers yourself

If these findings make you feel uneasy the next time you go to the freezer, you can easily prepare your own fish fingers in the future.

  • 2 cod or redfish fillets

  • a bit of salt

  • some pepper

  • 4 eggs

  • 100g flour

  • 2 tbsp breadcrumbs

  • 50g butter

  • 100 ml oil

  • 1 lemon

This is how quickly you can prepare your own fish fingers

  • Wash the fish fillets, pat dry and remove any bones.

    Then season the fillets with salt and pepper and cut them into thick strips.

  • Crack the eggs into a large plate and then whisk them.

    Place the flour and breadcrumbs on a large plate.

  • Now first roll the fish pieces in flour and then pull them through the beaten egg.

    Finally, coat the fish in the breadcrumbs.

  • Heat butter and oil, not necessarily olive oil (there are inexpensive alternatives), in a pan and fry the fish sticks on both sides until golden brown.

    Then place the fish sticks on a piece of kitchen paper to degrease them.

  • Cut the lemon into slices and then serve with the fish sticks.
