Perfect for your meal prep or to snack on.
A so-called “Chopped Chicken Salad” is a typical American salad in which all the ingredients are cut very small, as the name suggests (“chop” means “to chop”).
Anything goes with this salad, so you can adapt it to your own preferences and taste.
Maybe that's why the protein-rich snack is so popular, despite the intensive preparation time?
We love this salad because it stays crisp and fresh for a particularly long time.
It's perfect for an office lunch or as meal prep for the week.
Our version of the Chopped Chicken Salad has an Asian touch thanks to ginger, chili, soy and fish sauce and is really delicious.
That's how it's done:
These ingredients are needed for the salad:
Chicken:
5 tbsp olive oil
500 g chicken breast fillet
2 tbsp soy sauce
Salad:
100 g celery, sliced
100 g carrots, grated
100 g cocktail tomatoes, quartered
150 g cucumber, diced
50 g onions, diced
100 g peanuts, roasted and salted
15 g chili pepper, sliced
100 g red cabbage, cut into strips
Dressing:
4 tbsp lime juice
2 tbsp fish sauce
1 tbsp lime zest
3 cloves of garlic, minced
1 tbsp ginger, grated
3 tbsp maple syrup
3 tbsp sunflower oil
3 tbsp sesame oil
salt and pepper
And the Chopped Chicken Salad is so easy to prepare:
For the chicken:
Heat olive oil in a pan.
Fry the chicken breast fillet on both sides until the meat is cooked through.
Deglaze with soy sauce and set aside.
Cut into small cubes.
For the salad:
cut all the ingredients into small pieces and put them in a bowl.
For the dressing:
mix all the ingredients together.
Season with salt and pepper.
Mix the dressing with the salad.
Relish.
Chopped Chicken Salad: a salad that fills you up.
