Potato and parsley root puree:
1 tsp salt
400 g parsley root, diced
600 g potatoes, diced
50g butter
150 ml cream
150 ml milk
1 pinch of nutmeg, ground
0.5 tsp pepper
1 tsp salt
100 g mountain cheese, grated
5 g parsley, chopped
Melting onions:
40g butter
200 g onions, cut into strips
0.5 tsp salt
On top:
Mountain cheese

Preparation is so easy:
Preheat oven to 180 °C fan oven.
For the potato and parsley root puree:
Bring enough water to the boil in a large pot.
Add salt and cook parsley root and potatoes for 15 minutes until soft.
Then melt butter in another pot and mix with cream, milk, nutmeg, pepper and salt.
Bring to the boil briefly and remove from the heat.
Add the liquid to the potatoes and parsley root and mash to a puree.
Finally, fold in the mountain cheese and parsley.
For the melted onions:
Melt butter in a pan.
Fry the onions with salt until the onions are lightly browned and crispy.
Arrange the potato and parsley root puree on ovenproof plates, distribute the melted onions on top and gratinate with mountain cheese.
Bake for ten minutes.
Finally, garnish with croutons to taste and enjoy.
