In the past I visited Greece for a few days, so I gave up Athens or the islands and headed towards the north of the country to travel in the open air and not in its crowded towns.

To my surprise, the cuisine I discovered was slightly different from the one I knew during my visits to the big cities, and among the dishes I ate there was also this dish - baked lima beans that melted like butter in the mouth, with tomatoes, olive oil and oregano.



This dish can be served hot with rice or as a type of mezte served at room temperature with grated feta cheese on top and bread.

Ingredients for the recipe

    • 2 cups lima beans (Bobs), soaked in water for 6-7 hours

    • ¼ cup olive oil

    • 1 medium onion, chopped

    • 4 crushed garlic cloves

    • ½ can of canned chopped tomatoes (200 grams)

    • 3 spoons of honey

    • 2 tablespoons apple cider vinegar

    • Salt

    • 1 teaspoon dry oregano

Preparation

How do you make baked beans with tomatoes and oregano?

    Drain the beans from the soaking water and bring to a boil in a pot with plenty of new water.

    Cook for about an hour and a half on low heat until softened and filter (it is recommended to cook an amount of 1 kg, use 4 cups of cooked beans and freeze the rest for next time).

    Heat the oven to 180 degrees.

    In a pan or pot that can go into the oven, fry the chopped onion with the olive oil until soft.

    Add the garlic cloves and fry for another 1-2 minutes.

    Add the tomatoes, honey and vinegar and mix.

    Season with salt and oregano, taste and check that the sauce is balanced in its flavors.

    Add the beans and pour water to cover.

    You can use the cooking water of the beans.

    Put in the oven without a lid for 35 minutes, until the liquids are reduced a little and the beans are browned on top.

    Before serving, drizzle a little more olive oil on top.

  • Serve hot with rice or at room temperature with grated feta cheese on top, and on the side of bread.
