1 kg potatoes, waxy variety
1 egg
2 tbsp flour
1 tsp salt
1 pinch of pepper
100g breadcrumbs
3 tbsp clarified butter

How to prepare crispy potato croquettes:
Peel and cook potatoes until tender.
Drain and press through a potato press while still warm.
Add the egg, flour, salt and pepper to the potatoes and knead everything well.
Form small croquettes out of the dough.
Place the breadcrumbs on a plate and coat the croquettes in them.
Heat clarified butter in a pan.
Fry the croquettes in portions in the hot fat until golden brown.
Drain on kitchen paper and serve.
