You need these ingredients for beetroot buffers:

  • Herb quark:

  • 200 g quark

  • 0.5 tsp salt

  • 1 pinch of pepper

  • 2 tbsp parsley

  • 3 tsp cream horseradish

  • Beetroot buffer:

  • 400 g potatoes, peeled and grated

  • 600 g beetroot, peeled and grated

  • 1 tsp salt

  • 1 egg

  • 100 g onions, diced

  • 1 pinch of nutmeg, ground

  • 50g flour

  • cooking oil

Preparation is so easy:

  • For the herb curd:

    Mix the quark, salt, pepper, parsley and horseradish cream in a small bowl.

  • For the beetroot pancakes:

    In a large bowl, mix together the potatoes, beetroot and salt.

    Let rest for 15 minutes.

    Squeeze excess liquid out of the vegetables using a fine-mesh sieve.

    Then add the egg, onions, nutmeg and flour to the mixture and mix everything together.

  • Form buffers and fry them in a hot pan with cooking oil for five minutes on each side.

  • Serve with herb quark and enjoy!
