The ingredients for the Victoria Sponge Cake
You can make the Victoria Sponge Cake in just a few simple steps.

For about 12 pieces you will need:
200 g wheat flour
220 g soft butter or margarine
130g sugar
40g whipped cream
1 packet of vanilla sugar
1/4 tsp salt
3 eggs (size L)
2 teaspoons of baking soda
2 tsp vanilla extract
For the cream:
90g whipped cream
50 g soft butter
50g powdered sugar
1 teaspoon vanilla extract or some pudding powder

How to prepare the Victoria sponge cake
Preheat the oven to 180 °C top/bottom heat (160 °C fan oven).
Mix the butter, sugar (including vanilla sugar) and salt together and stir until creamy.
Then add the eggs one at a time.
Then stir in the cream and vanilla extract.
Mix baking powder with the flour and fold this into the butter mixture.
Halve the dough.
Grease a springform pan (about 20 cm in diameter) and pour half of the dough into it.
Bake this for about 25 minutes.
You can use the stick test to see whether the cake is ready.
If you have a second springform pan the same size, you can prepare the other half of the dough.
Alternatively, use the same baking pan after it has cooled.
Cream for the Victoria sponge cake
Place the powdered sugar, butter, cream, vanilla extract or powder in a bowl and beat.
After baking the cake layers, remove them both from the mold.
Spread the vanilla cream on one side of the cake base.
If you like, you can spread strawberry jam on the cake beforehand.
Once the cake has been coated, place the second cake layer on top and press it down carefully.
You can sprinkle the surface with powdered sugar.
