Lentils are a larger variety of legumes and have an earthy and slightly nutty taste.

They retain their shape during the cooking process, but become soft and creamy in the inner core.

These properties make them ideal for stews, soups, casseroles, patties and purees.

Preparation is child's play thanks to these step-by-step instructions:

  • Wash and drain the lentils.

Peel the onion and cut it into cubes.

Clean and wash the leek, celery and carrots and also cut them into small pieces.

Wash, peel and cut potatoes into cubes.

  • Heat oil in a large pot and fry bacon cubes together with diced onions for five minutes.

Add vegetables and sauté for another three minutes.

  • Add lentils and potatoes.

    Deglaze with vegetable broth.

Cover and simmer over low heat for 30 minutes.

  • Season to taste with salt, pepper, marjoram, cumin, sugar and white wine vinegar.

Cut the Vienna sausages into slices and heat them in the stew.

  • Pour into soup bowls.

A slice of mixed rye bread goes well with this.

  • Easy Tasty Tip:

For a vegetarian lentil stew, simply skip the bacon and sausages and use smoked tofu or a vegetarian sausage alternative.

The hearty taste can be achieved with smoked salt, Worcestershire sauce or soy sauce.

There are many different types of lentils that are used in kitchens all over the world.

For an authentic Turkish lentil soup or oriental lentil meatballs in coconut-tomato sauce, use red lentils.

Red lentils are peeled brown lentils with a mild aroma.

They do not need to be soaked, are floury and fall apart very quickly when cooked, in contrast to the small beluga lentils.

They are hearty and perfect for salads like a pumpkin and lentil salad with feta.
