However, make sure that you only use organic lemon zest.

You need the following ingredients for this sheet cake:

  • 250g sugar

  • 300g butter

  • 1 heaped teaspoon of baking powder

  • 300g flour

  • 250g powdered sugar

  • 5 eggs

  • 2 untreated lemons

Bake your own juicy lemon cake from the tray

  • First, use the mixer to beat the butter and sugar in a bowl to create a fluffy, foamy texture, then stir in the eggs.

    Additional ingredients are added in the next steps.

  • You should now wash the untreated lemons thoroughly with hot water.

    Then grate the zest of one lemon and squeeze both lemons.

    Tip: To get as much lemon juice as possible, roll it out tightly over the worktop beforehand.

  • Add the lemon zest and some of the lemon juice (about 3 tablespoons) as well as the flour and baking powder to the mixture (made from butter, sugar and eggs) and mix everything in the bowl so that a smooth dough is formed.

  • You can now spread the whole thing evenly on a baking tray lined with baking paper and bake the cake in the oven at 160 degrees top and bottom heat for about 25 minutes.

  • While you let the cake cool, you can now work on the icing for the lemon cake: Mix the powdered sugar with some of the lemon juice and a small amount of water to make a thick icing.

  • You can now simply spread the icing over the cooled cake.

  • Simply cut the cake into pieces and serve with a slice of lemon on top.
