This is how easy it is to make the Meal Prep Chicken Burrito Bowl at home:

  • Chicken:

  • 1 tsp olive oil

  • 1 teaspoon paprika powder

  • 1 tsp chili powder

  • 0.5 tsp salt

  • 0.25 tsp pepper

  • 2 chicken breast fillets (approx. 150 g each)

  • Burrito bowls:

  • 1 avocado

  • 1 tsp lemon juice

  • 2 tomatoes

  • 1 red onion

  • 1 lime

  • 4 stalks of coriander

  • 600 g rice, cooked (basmati or brown rice)

  • 240 g black beans or kidney beans, canned

  • 285 g canned corn

  • 100g grated cheese

  • Salt, to taste

  • pepper, to taste

  • 100g guacamole

  • 100g salsa

  • 4 tbsp sour cream (optional)

  • 4 jalapeños, sliced ​​(optional)

Preparing the Chicken Burrito Bowl is not only easy, but also quick:

  • For the chicken, mix olive oil, paprika powder, chili powder, salt and pepper and coat the chicken breast fillet evenly.

    Fry the meat in a hot pan for about 3 minutes on both sides and cut into pieces.

  • Cut the avocado into pieces and drizzle with lemon juice.

    Dice tomatoes, chop onion finely.

    Cut the lime into wedges and roughly pick off the coriander leaves.

  • As a base for the bowl, distribute cooked rice among the prepared containers.

    Then add the remaining ingredients chicken, avocado, tomatoes, onion, beans, corn and grated cheese on top.

    Finally, season the bowl with salt and pepper as desired and garnish with coriander and lime wedges.

  • Refrigerate burrito bowl until serving.

    The bowl can be eaten warm or cold, with guacamole, salsa and sour cream and jalapeños to taste.
