Our Asian theme week takes us to Japan.
Japanese cuisine is like a work of art.
Here, the focus is on the product and even with inexpensive dishes, great care and quality are important.
No wonder that sushi masters have been perfecting their profession for almost decades and always strive for the best.
But there's more to food in Japan than just sushi and raw fish.
Many other typical Japanese dishes are now known worldwide and are experiencing a real hype, such as ramen, miso soup, gyoza, tempura and okonomiyaki.
The latter hides a kind of hearty pancake with cabbage and shrimp.
When preparing the dough, you can put anything that tastes good on the flatbread.
Hence the name:
okonomi
means “what I like” and
yaki
means “fried”.
Today we have the delicious snack in a handy muffin format.
Have fun trying!
That's how it's done:
You need these ingredients:
Okonomiyaki dough:
220 g wheat flour
1 teaspoon Baking powder
0.25 tsp pepper
4 eggs
350 ml water
250 g pointed cabbage, thin strips
100 g carrot, grated
200g prawns, cooked and peeled
2 spring onions, cut into rings
1 teaspoon ginger, chopped
2 tbsp sesame oil
Aside from that:
muffin tin
Sunflower oil for greasing
Toppings:
6 tbsp Japanese mayonnaise
6 tbsp hoisin sauce
spring onions
sesame
Bonito flakes
What are bonito flakes?
Bonito flakes (Japanese: Katsuobushi) are extremely thin, smoked and dried fish flakes of the bonito fish.
It belongs to the mackerel and tuna family and is also called “striped tuna”.
When bonito flakes are placed on hot foods, the steam released causes the thin fish flakes to move and dance.
The shaved flakes are often used to make dashi stock (for ramen) or as a topping for Japanese pancakes (okonomiyaki).
The preparation is simple:
Preheat oven to 180 °C bottom/top heat.
For the okonomiyaki dough:
In a bowl, mix the wheat flour, baking powder, pepper, eggs and water into a homogeneous dough.
Add pointed cabbage, carrots, shrimp, spring onion, ginger and sesame oil and mix everything well.
Grease a muffin tin with sunflower oil (or another tasteless vegetable oil).
Pour the batter into the wells of the muffin cups.
Bake in the preheated oven for about 30 minutes until the dough is cooked through.
For the toppings:
Garnish muffins with Japanese mayonnaise, hoisin sauce, spring onions, sesame seeds and bonito flakes as desired.
