No Easter without an Easter basket!
Easter is not just a religious holiday, but a great celebration for the entire family.
You spend wonderful days together and maintain (perhaps also your own) traditions.
In most cases, Easter bunnies, Easter eggs and Easter nests should not be missing.
Our sweet little Easter nests are neither woven from twigs nor lined with straw, but instead consist of a juicy carrot and pistachio cake.
Baked in small Bundt cake tins and decorated with chocolate eggs, they are a lovely addition to the classic Easter basket.
They can also be hidden if you don't want to share them.
That's how it's done:
You need the following ingredients for the sweet Easter nests:
Dough:
100 g butter, soft
100g sugar
3 eggs
200g flour
1 teaspoon Baking powder
150 g carrots, grated
1 tbsp lemon peel
50 g pistachios, chopped
Decoration:
150g powdered sugar
3 tbsp lemon juice
50 g pistachio nuts, chopped
Chocolate eggs
It's so easy to prepare the mini cakes:
For the dough:
Beat the butter, sugar and eggs with the beaters of a hand mixer until fluffy.
Mix flour with baking powder and stir in.
Finally fold in the carrots, lemon zest and pistachios.
Pour the dough evenly into the hollows of a greased and floured mini Bundt cake tin.
Pat the shape on the work surface until it is slightly smooth so that excess air in the dough can escape.
Bake in a preheated oven at 180 °C for about 18 minutes.
Allow the mini bundt cakes to cool in the tin and carefully remove them.
For the decoration:
Mix powdered sugar with lemon juice until smooth.
Decorate completely cooled mini carrot cakes with icing, pistachios and chocolate eggs.
Eat it!
Almost too sweet to eat!
