Mexico's national cuisine has lots of classic recipes to offer - and one tastes better than the other.

At the forefront are heavenly filled quesadillas.

The quesadilla doesn't require any fancy ingredients or complicated preparation steps, instead sticking to a simple concept that works on any plate.

A crispy tortilla and an absolutely irresistible filling come together to create one of Mexico's many culinary treasures.

The classic from Mexican cuisine, which can be found on every menu, cannot do without one ingredient.

The eponymous cheese (Spanish: queso) should not be missing; in original recipes, the country's typical Oaxaca cheese is often on the list of ingredients.

An alternative that is easier to find in this country is Manchego cheese or mozzarella.

The tortilla is just as important; nowadays, instead of the traditional corn tortilla, the wheat tortilla is often used.

The melting core of cheese is combined with vegetables and meat before the quesadilla can finally be folded and eaten. 

If you're in the mood for Mexican cuisine, quesadillas are a good choice.

They are easily fried in the pan.

Chicken quesadillas require the following ingredients:

  • 2 chicken breast fillets (approx. 175 g each)

  • 1 tsp oil

  • 1 yellow pepper, cut into pieces

  • 1 red onion, cut into strips

  • 2 tomatoes, diced

  • Salt, to taste

  • pepper, to taste 

  • 4 corn or flour tortillas

  • 150g grated Manchego cheese or mozzarella

  • 100g pico de gallo

The preparation of the Mexican quesadilla is quickly explained:

  • Cut the chicken breast fillets into bite-sized pieces.

    Fry the meat in a pan in hot oil for about 4 minutes.

  • Add the peppers, onions and tomatoes and fry everything again for about 2 minutes.

    Season quesadilla filling with salt and pepper.

  • Heat the tortilla in a clean pan without fat.

    Cover one half with a little cheese and let it melt briefly.

    Spread a quarter of the chicken and pepper mixture on the cheese and fold the quesadilla together.

    Repeat with remaining tortillas and filling.

  • If necessary, cut the quesadilla into pieces and serve with pico de gallo.
