Kataif/Asaf Ambram

Ingredients:

  • For the dough:

    1 cup sifted flour

  • 1 teaspoon of yeast

  • 1 cup of milk

  • For the filling:

    1 cup (200 g) coarsely chopped walnuts and almonds

  • 1/2 cup sugar

  • 1 teaspoon of cinnamon

  • For the filling:

    200 grams of goat cheese or grated mozzarella

  • A little butter for greasing the pan and frying

  • For sugar syrup:

    1 cup of water

  • 2 cups of sugar

  • 1/2 lemon

Instructions:

1. To prepare the dough:

put flour, yeast and milk in a bowl and mix well.



2.

Cover with a clean towel and leave to rise for about two hours, until it looks like pancake batter.



3.

Heat a non-stick pan with a little butter.

Pour a little batter into the pan, so that a thin circle is obtained (about 10 cm in diameter).



4.

Fry one side until golden. Do not turn and transfer to a plate. Prepare the entire amount in this way and cool.



5.

Mix together all the filling ingredients. A heaping spoonful of stuffing in the center as the non-fried side of the omelette. Glue the edges with a damp finger to obtain a saharon shape.



6.

Fry the omelettes on both sides in a little butter until golden. Alternatively, grease a pan with butter, place the kataif in it and brush with more butter, then put it in the oven which is heated to 200 degrees for 10 minutes.



7. Make sugar syrup:

bring the water and sugar to a boil in a pot and cook for about half an hour, until the liquid reduces and the syrup becomes thick. Remove from the heat and squeeze half a lemon.



8.

Pour sugar syrup into a deep plate and dip the fritters in it One after another.
