Of all the recipe categories in the book, we were immediately drawn to the one that announces - cakes with only five ingredients.
We immediately browsed and fell in love with the no-bake peanut butter and coffee pie.
This recipe is also a wonderful way to spend the afternoon with the kids, and this pie is a sweet and wonderful way to make them happy.

Ingredients for the recipe
Laklit
200 gram biscuits
100 grams thick peanut butter (like skippy)
for stuffing
200 grams smooth peanut butter
for coffee creamer
1 pack of 38% very cold sweet cream (250 ml)
2 teaspoons of coffee dissolved in the powder
60 grams powdered sugar (1/2 cup)
to serve
A handful of coffee beans

Preparation
How do you make coffee and peanut butter pie without baking?

To make the crust: grease a 24 cm diameter springform pie pan with butter.

Place the biscuits in the bowl of a food processor with a steel blade and grind to a fine powder.
Add the peanut butter and grind until a moist crumbly mixture is obtained.

Transfer the crumbs to the mold and with the help of your hands tighten well to the base and sides.
Cover with plastic wrap and freeze for 30 minutes.

After freezing, spread a thin and even layer of peanut butter on the cake.

To prepare the coffee cream: whip the sweet cream, coffee powder and sugar powder in a mixer bowl until a very stable whipped cream is obtained.
Transfer the whipped cream to a piping bag with a 2 cm diameter serrated tube, and sprinkle mounds of coffee cream on the top of the pie.

Sprinkle over coffee beans and serve.

Tip: You can convert the peanut butter into milk jam in the same amount, for a variety of flavors and a sweeter pie.

For the gluten-free version: gluten-free biscuits are used.

Storage: The pie will keep in the refrigerator, in a closed container, for up to four days.
