For the lemony sponge cake you need these ingredients:
Batter:
200 ml sunflower oil
200g sugar
4 eggs
1 pinch of salt
50 ml lemon juice
2 tsp lemon zest
250 g quark
250 g flour
1 packet of baking powder
Impregnation:
50g powdered sugar
50 ml lemon juice
Glaze and decoration:
200g powdered sugar
20 ml lemon juice
Edible lemons, sliced
Mint, to taste

The preparation is quick and easy:
For the batter:
Mix sunflower oil with sugar until the sugar has dissolved.
Add eggs, salt, lemon juice, lemon zest and quark and mix.
Mix flour with baking powder, add and stir until a homogeneous dough is formed.
Place the dough in a greased and floured loaf pan.
Bake in an oven preheated to 160 °C for about 45 minutes.
After two thirds of the baking time, cover with aluminum foil so that the cake doesn't get too dark.
For the soaking:
In the meantime, mix powdered sugar with lemon juice.
Remove the cake from the oven and immediately poke holes with a wooden skewer.
Pour the mixture evenly over the top and let the cake cool completely.
For the glaze:
Mix the powdered sugar with lemon juice to form a thick glaze.
Add the cooled lemon cake and garnish with lemon slices and mint leaves if desired.
