After all, dishes like the creamy one-pot broccolina noodles and the quick one-pot pasta with butternut squash don't have to sacrifice any of their taste despite saving on dishes.

Ingredients for the simple one-pot gnocchi

For about four servings

  • 1 kg gnocchi (from the fresh food counter)

  • 2 cans chopped tomatoes (400/500 grams each)

  • 200 ml vegetable broth

  • 2 tbsp tomato paste

  • 3 tbsp olive oil

  • 1 ball of mozzarella (or a package of mini mozzarella)

  • 1 large onion

  • 2 cloves garlic

  • 30g basil

  • salt and pepper

  • 1 tbsp sugar (brown sugar at best)

  • Optionally also dried herbs or chili flakes

The potato dumplings in tomato and mozzarella sauce are so easy to prepare

  • First, garlic and onion are peeled and finely chopped.

    The basil is also washed and cut into strips.

    Dice the mozzarella balls or halve the mini mozzarellas.

  • Sauté the onion and garlic in a large pot with a little olive oil until translucent.

    Now add the sugar and let everything caramelize slightly.

    Then stir in the tomato paste.

    In the next step, add the chopped tomatoes and vegetable stock and season with salt and pepper and spices of your choice.

  • Add the gnocchi to the pot and let them simmer in the sauce for about five to ten minutes.

    Remove the pot from the heat and stir in the mozzarella and basil.

    If you like it even creamier, you can also add a little cream or more mozzarella to the tomato sauce.
