Arais fish in a thin Druze pita/Dror Einav
The Araais dish took us by storm and the biggest question is how it didn't happen long before.
In its familiar version, it is a pita filled with a meat mixture that is roasted on the grill, on a pan and even in a toaster, creating a perfect combination between the favorite carbohydrate and the meat.
Meir Adoni took the arais and turned it, as only he knows how, into a light dish rich in flavors, when the filling replaces chopped fish seasoned with fennel seeds and coriander, and the plump pita, which does not match the delicacy of the fish, is replaced by a thin Druze pita.
The thickness of the dough is important, so even if you are unable to get a Druze pita, it is better to prepare the dish with a thin tortilla that will fit better.

Ingredients for the recipe

2 Druze pitas, cut into quarters
2 tablespoons Moroccan tarissa (homemade or purchased)
Sea kebab
400 grams of sea mackerel, clean of skin and bones, finely chopped
100 grams of sea mackerel without skin and bones, ground in a food processor
½ bunch of cilantro
¼ Roasted walnuts
1 tablespoon coarsely crushed fennel seeds
1 teaspoon coriander seeds
1 like pittacumon
¼ cup olive oil
salt and black pepper
to serve
4 eggs - made into eye omelettes
¼ raw kostachina
2 tablespoons
2 halved tomatoes
½ bunch parsley, roughly torn

Preparation
How do you make fish arais?

Mix together all the ingredients of the fish kebab and the spices.

Take a quarter of a Druze pita and spread it with a little of the Arisa.
Place a spoonful of the fish filling in the center of the pita, along its length, fold one side of the pita over it and the other side over it and flatten a little so that you get a cone or flat triangle shape.

In a pan with a little olive oil, sear the tomato halves and the thin and stuffed pitas until brown, 2-3 minutes on each side.

Serve two stuffed pitas on each plate, an egg, tahini with a little amba on top if you like, half a burnt tomato and parsley.
