Simple, but oh-so!
This golden yellow semolina cake, also called Revani, looks quite inconspicuous at first glance.
But you shouldn't be fooled because the cake is super juicy, sweet and still has a refreshing orange note.
For us the perfect end to our Greek theme week.
That's how it's done:
You need these ingredients:
Dough:
6 eggs, separated
1 pinch of salt
160g sugar
200 g butter, soft
120 g wheat flour
150 g durum wheat semolina
3 tsp baking powder
1 orange, grated
140 ml orange juice
Syrup:
150g sugar
50 ml lemon juice
120ml water
20 ml Metaxa
Topping:
Coconut flakes (optional)
Aside from that:
Springform pan (26 cm diameter)
The preparation is simple:
Preheat oven to 175 °C fan oven.
For the dough:
Separate the eggs.
Beat the egg whites with a pinch of salt until stiff and set aside.
Beat egg yolks, butter and sugar until fluffy.
Stir in flour, durum wheat semolina and baking powder.
Add orange zest and juice and stir until a smooth dough forms.
Finally, carefully fold in the egg whites.
Line a springform pan with baking paper and pour the dough into it.
Smooth it out.
Bake until golden brown, about 50 minutes, until the cake is cooked through (do a chopstick test).
For the syrup:
Bring sugar, lemon juice, water and Metaxa to the boil in a small saucepan.
Simmer for about 5 minutes and set aside.
Remove the cake from the oven and immediately pour hot syrup over it.
Allow to cool completely and remove from the mold.
Garnish with coconut flakes if desired.
