, which comes in a light and a dark version, is pretty much the only bread you can buy on the island - that's how popular it is!

But it's not bad, because it's really tasty.

The special thing about this bread is the slightly sour taste that comes from the baking soda and buttermilk it contains.

You read that right: baking soda!

This makes it probably the bread recipe with the shortest preparation time, as it doesn't have to rise for a long time and doesn't require a high-maintenance Hermann sourdough.

  • 250 g wheat flour

  • 250 g whole wheat flour

  • 2 tsp baking soda

  • 1 tsp salt

  • 350 ml buttermilk

Pea hummus:

  • 250 g frozen peas

  • 0.5 tsp salt

  • 1 clove of garlic

  • 0.5 tsp cumin

  • 1 pinch of pepper

  • 2 tbsp olive oil

  • 40 g tahini (sesame paste)

  • 2 tsp lemon juice

  • 150ml water

Thanks to the Irish bread recipe, baking bread is easy, like this:

  • For the soda bread:

    Mix both types of flour, baking soda and salt in a large bowl.


    Add buttermilk and knead everything into a smooth dough using the dough hook of a hand mixer.

  • Knead the dough again with your hands on a floured surface, shape it into a loaf and place it on a baking tray lined with baking paper.

  • Cut into the surface and bake in a preheated oven at 200 °C top/bottom heat for 40 minutes until light brown.

    The soda bread is ready when it sounds hollow when tapped on the bottom.

  • For the pea hummus:

    Place the thawed peas in a blender along with salt, garlic, cumin, pepper, olive oil, tahini and lemon juice and puree until fine.

    Add up to 150 milliliters of water as needed to achieve the desired creamy consistency.

  • Remove the soda bread from the oven, let it cool and enjoy with the pea hummus.
