Farmer's salad:
1 cucumber
250 g cherry tomatoes
100 g Kalamata olives, pitted
80 g pickled red onions

4 tbsp olive oil
2 tbsp balsamic vinegar
1 tbsp petimezi (grape syrup)
1 tsp oregano
Salt

Feta yogurt balls:
150g feta
75g Greek yogurt
1 tsp olive oil
Lemon zest (optional)
Preparing the classic Greek salad is easy:
For the farmer's salad:
Clean, wash, peel, halve the cucumber, scrape out the core with a spoon and cut into slices.
Wash and halve the cherry tomatoes.
Cut the olives into fine strips.
For the dressing:
Mix olive oil, balsamic vinegar, grape syrup and oregano and season with salt and pepper.
Mix dressing with all salad ingredients.
For the feta-yoghurt balls:
Finely puree the feta together with the yoghurt, olive oil and, if desired, a little lemon zest in a stand mixer.
Use two teaspoons to make small gnomes out of the feta-yoghurt mixture and place them on the farmer's salad.
Serve the farmer's salad with grilled meat or hearty bifteki.
