500 g wheat flour
3 eggs
150g milk
75 g butter, room temperature
10g salt
35g sugar
15g fresh yeast
2 egg yolks, whisked

Preparing homemade brioche burger buns is so easy:
In a large bowl, knead the flour, eggs, milk, butter, salt, sugar and fresh yeast into a smooth dough.
Place the dough in an oiled storage container and store in the refrigerator for twelve to fifteen hours, preferably overnight.
Remove the bread dough and divide it into six equal squares on a floured surface.
Place the opposite ends together in the middle and press gently.
Repeat this step until the burger buns get their typical round shape.
Place brioche buns on a baking tray lined with baking paper.
For the typical shine, brush the top of the buns with beaten egg yolk.
Cover and let rest again for 60 to 90 minutes until they have risen nicely.
Preheat the oven to 230 °C top/bottom heat.
After the resting time, bake the burger buns in the hot oven for eight to twelve minutes until the desired browning is achieved.
Immediately after removing, brush again with egg yolk and let cool.
Top with whatever you like and enjoy!
