Tips for heavenly asparagus dishes: How to prepare the vegetables correctly

In order to get as much flavor out of the seasonal vegetables as possible, you should store the asparagus properly after purchasing it and then prepare it carefully.

Asparagus is considered a particularly healthy, although not exactly cheap, vegetable.

As soon as the first stalks sprout from the ground in spring, it is advisable to buy the vegetables fresh and, if possible, process them on the day of purchase.

Otherwise, asparagus can be stored in the refrigerator for a few days.

During the asparagus season, numerous light spring dishes can be conjured up using the popular vegetable.

Peeling asparagus: Why you should take your time to do this

When it comes to white asparagus, you cannot avoid peeling the spears thoroughly.

The peel is very rich in fiber and tastes extremely bitter, which would make the vegetable completely inedible.

Wash and dry the vegetables thoroughly.

Then use an asparagus peeler (alternatively: a conventional peeler) to remove the peel from the spears around one and a half centimeters below the head.

Be sure to peel the peel generously without removing too much of the actual asparagus.

Just before cooking, cut off the woody ends of the asparagus spears.

One to two centimeters of the lower end should be enough.

Green asparagus also has woody ends.

These can simply be broken off if the asparagus is particularly fresh.

If the asparagus is already a little weaker, it is best to use a sharp kitchen knife.

Since the peel of green asparagus is much softer than white asparagus, most of it can be eaten.

Only the somewhat woody lower third of the sticks should be easily peeled off.

This is how you are sure to succeed with asparagus

Cooking asparagus is an art in itself, partly because the size of the spears varies greatly.

This makes it difficult to set a general cooking time for the vegetables.

First bring some salted water to the boil in a large pot with a little butter to enhance the flavor, a pinch of sugar to reduce the bitterness and a dash of lemon juice.

After the water has boiled, turn the temperature down slightly.

Only then place the asparagus spears in the hot water and let them cook over medium heat.

A rough guideline for the cooking time of white asparagus is around twelve or 15 to 20 minutes.

Here you should stick with cooking and check the consistency of the sticks at regular intervals by piercing them with a fork.

The asparagus should be soft but still offer some resistance.

Seven to eight minutes are usually enough for green asparagus.

The asparagus does not become buttery soft, but at best al dente.

And when fried, white asparagus usually takes around twelve to 15 minutes, while green asparagus only takes around eight minutes in the pan.
