At first glance you might think that there are a lot of fried eggs that ended up on the baking tray rather than in the pan.
But appearances are deceptive: the fried egg cake is a sponge cake that is garnished with a creamy vanilla pudding layer and apricot halves.
The light color of the pudding and the apricot halves are reminiscent of egg yolks and egg whites - delicious fun for young and old, which also shines in mini format as fried egg cakes.
This is how easy it is to make a simple fried egg cake from a tray:
For a fluffy sponge cake with vanilla pudding and apricots you need these ingredients:
Batter:
250 g butter, soft
180g sugar
1 pinch of salt
5 eggs
280g flour
3 tsp baking powder
3 tbsp milk
Custard cream:
2 packets of vanilla pudding powder
120g sugar
1 packet of vanilla sugar
800 ml milk
400 g sour cream
Topping:
500 g apricot halves (canned)
2 packets of cake icing, clear
2 tbsp sugar
2 tbsp pistachios
The preparation of the fried egg cake is successful thanks to these step-by-step instructions:
Preheat oven to 160 °C fan oven.
Grease a deep baking tray with high sides or line it with baking paper.
For the batter:
Beat the butter together with the sugar and salt until creamy and whitish using a hand mixer.
Stir in eggs one at a time.
Add flour and baking powder and work into a smooth dough.
Stir in milk.
Pour the dough evenly onto the prepared baking sheet.
Bake until light brown, 20 minutes.
Remove and let cool completely.
For the pudding cream:
In the meantime, stir the pudding powder with the sugar and 50 milliliters of milk until smooth.
Bring the remaining milk to the boil, add the mixed pudding powder and simmer for a minute while stirring.
Allow to cool, then stir in the sour cream.
Spread the cream on the cooled cake and chill for an hour.
For the topping:
Prepare the clear cake icing according to the package instructions with apricot sugar syrup, water and sugar.
Spread the apricot halves on the cake with the cut side down and secure with slightly cooled cake icing.
Refrigerate for another two hours.
Decorate the fried egg cake with chopped pistachios, cut into pieces and enjoy.
