He keeps his star for the Table du 11, located in the Cour des Senteurs in Versailles, and recovers the Bib gourmand lost last year for the Bistrot du 11, located a stone's throw away.
“I am very happy for my restaurant and my team and satisfied to see that the Michelin Guide has adapted,” reacts the chef, keen to offer gastronomy accessible to as many people as possible.
I explained to them last year that due to inflation and the cost of energy, we could not afford the 38 euros they were asking for a meal including starter, main course and dessert.
I'm glad they listened to what I had to say.
I am the first customer of this type of establishment.
I find this range of customers great, from young couples aged 18 to retirees, and to be able to educate the palate.
