In addition to the spicy arrabbiata sauce, Italian cuisine contains a wealth of other recipes that delight with their simplicity and intense flavors.

An example is the dish of homemade scissor pasta with salsiccia tomato sauce, which captures the hearty and rustic notes of Italy.

A contrast to this is the colorful beetroot carpaccio, a fresh and visually appealing starter that surprises with its earthy sweetness and lightness.

Not to forget the aromatic melon and ham salad, which, with its combination of sweet and salty flavors, is a perfect example of the creative and harmonious combination of ingredients in Italian cuisine.

You need these ingredients for a classic arrabbiata sauce (spicy tomato sauce):

  • 4 tbsp olive oil

  • 3 cloves of garlic, finely chopped

  • 1 red cayenne chili pepper, finely chopped

  • 0.5 tbsp chili flakes

  • 800 g tomatoes (canned), chopped

  • 1.25 tbsp salt

  • 0.25 tbsp black pepper

  • 0.5 tbsp sugar

  • 2 tbsp parmesan, grated

  • 150 g cherry tomatoes, halved

  • basil

This is how easy it is to prepare a classic arrabbiata sauce (spicy tomato sauce):

  • Heat olive oil in a pan over medium heat.

Fry the garlic in it for ten seconds.

Add the cayenne chili pepper and chili flakes and let simmer for another minute.

  • Deglaze with chopped tomatoes.

Then fill a can with a little water, rinse it and add water to the pan.

    Season with salt and pepper.

  • Increase the temperature.

Once the sauce begins to simmer, reduce the heat to medium again and simmer for about 15 minutes, stirring occasionally.

If the sauce is too sour, you can add sugar to taste in this step.

  • Tip:

In Italian cuisine, the pasta is tossed in the sauce immediately after cooking.

These are briefly warmed in the sauce and, if necessary, pasta water can be added to loosen them up.

  • Finally garnish with parmesan, cherry tomatoes and basil and enjoy.

    Buon appetite!
