Sometimes boiled eggs simply cannot be peeled.

Unfortunately, the much-vaunted quenching with water is not a solution.

But there is an unusual alternative.

Just to avoid burning your fingers, many people wash their freshly boiled eggs with water that is as cold as possible.

This should also help the shell to separate from the protein more easily thanks to the sudden cold shock.

But that is often not the case.

This is because it is not the temperature difference, but the age of the egg that plays a decisive role in how easily an egg can be peeled.

Quenching stops the cooking process

If you want to store eggs for a longer period of time, you shouldn't scare them away.

Thomas Vilgis, physicist at the Max Planck Institute in Mainz, explained in

SZ Magazine

: “Peelability is much more related to the age of the egg.

In freshly laid eggs, proteins on the inner skin hold the eggshell and egg white together.

In older eggs, the pH value in the egg white increases, which prevents them from sticking.

The older the egg, the easier it is to peel.” If you want to wait that long, you could theoretically store it for two to three weeks to have a greater sense of success.

Quenching only means that the cooking process is stopped by the suddenly cold shell - according to the

, this can be an advantage if you want to enjoy a soft-boiled egg.

If the shell remained hot without quenching, the egg yolk would continue to cook.

Especially if you want to store the boiled eggs for a longer period of time, you should not deter eggs.

According to the Lower Saxony State Office for Consumer Protection and Food Safety (LAVES), the quenching water can allow bacteria to get into the interior of the egg through the finest cracks in the shell and cause the eggs to spoil more easily.

However, hard-boiled, unquenched eggs with the shell intact can be stored for up to four weeks.
