If you're following a low-carb diet or just want to watch your figure, you don't necessarily have to give up marble cake.

The classic cake recipe can also taste delicious without carbohydrates.

This marble cake recipe does not require any flour or conventional sugar.

Marble cake without flour and without sugar: You need these ingredients

For a Bundt cake tin:

  • 70 grams of butter

  • 120 grams of xylitol

  • a lemon

  • 6 eggs

  • 270 grams of quark

  • 2 g vanilla powder (alternatively: vanilla extract or vanilla bean pulp)

  • a pinch of baking soda

  • 220 grams of ground almonds

  • a pinch of salt

  • 1 tablespoon cocoa powder

Low-carb marble cake: This is how it works

  • Preheat the oven to 160 degrees top/bottom heat (fan oven 140 degrees).

  • Mix the butter with the xylitol in a bowl until creamy.

    The butter should be at room temperature.

    Now wash the lemon and finely grate the peel.

    Separate the eggs and slowly fold the yolks into the mixture.

    Then fold in the quark, vanilla powder and lemon peel.

    Add baking soda and ground almonds and mix everything into a smooth dough.

    Finally, beat the egg whites with a mixer into ice cream and fold loosely into the dough with a pinch of salt.

  • Place half of the dough in a separate bowl and stir in cocoa powder to form a dark dough.

    Grease the Bundt cake tin and pour the light dough into it first.

    Then add the dark dough and mix lightly with a wooden stick or fork to create a marble pattern.

  • Then place in the oven to bake for about 45 minutes until golden brown.

    After the baking time, use a chopstick to test whether the cake is ready.

    Remove from the oven, let cool and turn out of the mold.

  • Marble cake in the low-carb version: Replace conventional sugar

    If you are looking for sweet, low-calorie alternatives to table sugar, various substitutes are available.

    Coconut blossom sugar or rice syrup are particularly popular.

    But if you want to lose a few pounds, these alternatives won't get you very far: you can't save calories.

    Many people therefore turn to sugar substitutes such as xylitol and erythritol.
