Pavlova is an airy meringue pastry that is traditionally garnished with cream and fruit and impresses both in terms of taste and appearance.

Named after the famous ballerina Anna Pawlowa, this dessert represents elegance and lightness.

Easter Pavlova with Lemon Curd is a delicious twist on the classic dessert that adds a fresh and spring-like twist to the traditional recipe.

Instead of the usual fruit toppings, the crispy meringue is spread with a generous layer of lemon curd, which brings a touch of acidity with its citrus note.

The creamy lemon curd is a perfect complement to the sweet meringue and gives the pavlova an irresistible depth of flavor.

  • 300g sugar 

  • 1 tbsp lemon juice 

  • 30 g cornstarch

  • 250 ml cream

  • 50g powdered sugar

  • Lemon curd, to taste

  • mint, to taste

Preparing Easter Pavlova is easy thanks to these step-by-step instructions:

  • Preheat oven to 100 °C fan oven.

  • Beat the egg whites and sugar in a bowl until stiff, about eight minutes.

    Add lemon juice and cornstarch through a sieve and stir for another two minutes.

  • Place the meringue mixture on a baking tray lined with baking paper and use two teaspoons to spread it into circles with a well in the middle.

    Bake in the preheated oven for about 70 minutes, until the pavlova is light and crispy.

  • In the meantime, whip the cream until stiff, add the powdered sugar and stir in.

  • Remove the pavlova from the oven and let it cool on a wire rack.

    Then spread with the cream and garnish with lemon curd and mint.
