The risotto, refined with wine and butter, is cooked perfectly al dente and finally seasoned with a range of finely chopped herbs that provide a special depth of flavor. What's still missing? The creamy herb risotto with salmon is prepared like this:

For the herb risotto with salmon you need:

  • 40 ml cooking oil

  • 250 g risotto rice

  • 100g onions, finely chopped

  • 300 ml white wine

  • 1 liter vegetable broth

  • 40g butter

  • 10 g parsley, finely chopped

  • 10 g chives, finely chopped

  • 5 g thyme, finely chopped

  • 10 g dill, finely chopped

  • 5 g tarragon, finely chopped

  • 0.5 tsp pepper

  • Smoked salmon, to taste

  • Cress, to taste

This is how the spring-fresh herb risotto is cooked:

  • Heat the oil in a pot and fry the risotto rice for about two minutes while stirring.

  • Add onions and cook again, stirring, about 5 minutes.

  • Mix in the white wine and let the risotto simmer briefly, stirring occasionally.

  • Add some of the vegetable stock to the pot and simmer, stirring occasionally, until the stock has boiled away. Repeat with the remaining broth in batches and cook the rice until al dente. 

  • Mix the butter into the risotto and let it melt. 

  • Finally, add the parsley, chives, thyme, dill, tarragon and pepper to the rice and fold in.

  • Arrange the herb risotto in deep plates or bowls and garnish with some smoked salmon and fresh cress if desired.
