300 g oat flakes
100 g almonds, sliced

Preparation is so easy:
Preheat oven to 170 °C fan oven.
For the granola:
In a large bowl, mix the oats, almonds, coconut oil, honey, vanilla sugar, cinnamon and salt with a tablespoon. Then spread the granola flat on a baking tray lined with baking paper or in a large baking dish. Bake in a hot oven for about twelve minutes, until the granola is slightly crispy.
Fill the bottom of small mason jars or ramekins with granola. Top with chopped apricots to taste and top with coconut yoghurt. Top each glass with an apricot half to complete the fried egg look. Finally garnish with pistachios if you like.
Enjoy straight away or close the lid and bring it with you to Easter brunch.
