The institute's test kitchen tested whether baking paper can withstand higher temperatures and whether the food is contaminated with substances that are harmful to health. Of the 36 baking papers examined, 23 tested positive for the preservative sorbic acid, according to LAVES.

According to a recommendation from the Federal Institute for Risk Assessment (BfR), sorbic acid is permitted in quantities that serve to protect raw materials and processing aids from spoilage, but without preserving the food itself. The preservative sorbic acid is suspected of promoting allergies.

The examination of the 36 baking papers from the trade showed that all requirements for good manufacturing practice and labeling were met. The baking papers tested by the Lower Saxony State Office for Consumer Protection and Food Safety (LAVES) are therefore flawless and do not stand in the way of health-friendly baking pleasure. Recently, microplastics were even discovered in chewing gum, which is why experts warn of possible health risks.

In 2022, LAVES took another look at 15 baking papers. All tested products adhered to the limit values. Only one piece of baking paper was missing the label stating that baking paper can be used at a maximum of 220 degrees.
