The main course in winter is heartier with a tender pork fillet in a creamy leek and mushroom sauce and quickly in the form of a classic leek cream soup.

You need the following ingredients for a creamy leek soup with potatoes:
2 tbsp cooking oil
100 g shallots, diced
400 g leek, cut into rings
1 garlic clove, minced
250 g potatoes, peeled and diced
200 ml white wine
600 ml vegetable broth
150 ml whipped cream
1.5 tsp salt
1 tsp pepper
Pinch of cayenne pepper
Parsley, if desired

The preparation is not only quick, but also easy:
Heat cooking oil in a pot and sauté the shallots and leeks for five minutes. Add onions and potatoes and fry briefly.
Deglaze with white wine.
Add vegetable broth, heavy cream, salt, pepper and cayenne pepper and bring to the boil. Reduce heat and simmer covered for 20 minutes until vegetables are cooked through.
Puree finely with a hand blender and, if necessary, add some more vegetable broth or whipped cream.
Serve sprinkled with parsley.
