Are you longing for a hearty dish with seasonal asparagus? Then this spring pan is just the thing: soft potato dumplings in a creamy asparagus cream sauce.
In addition to the classic asparagus cream soup, the seasonal vegetables can be enjoyed in numerous variations. For example, in the form of a light asparagus pasta with lemon-Parmesan sauce, it tastes simply delicious.

As soon as the annual asparagus season begins in spring, many asparagus fans can't get enough of the healthy vegetables. After you have been able to get hold of particularly fresh asparagus at the weekly market or in the supermarket, it is important to prepare it accordingly.

600g gnocchi
1 bunch of green asparagus
1 onion
1 clove of garlic
150 ml cream
100 ml vegetable broth
1 tbsp olive oil
1 tbsp lemon juice
Some nutmeg (ground)
Salt and pepper
Optionally some parmesan for garnish

You can cook this vegetarian spring dish so quickly
For the gnocchi and asparagus pan, first peel and finely dice the onion and garlic. Wash the green asparagus thoroughly, remove the wooden ends and cut the spears into bite-sized pieces.
Briefly sauté the onion in a large pan with a little olive oil. Now add the asparagus to the pan and let both fry over medium heat for a few minutes. Then mix in the garlic.
Pour the mixed vegetable broth and cream over the vegetables and season the sauce with a little lemon juice, salt, pepper and nutmeg. Let everything simmer for about five minutes.
Meanwhile, fry the gnocchi in a little olive oil. Finally, add the gnocchi to the sauce and stir well. Garnish with a little grated Parmesan if desired. Bon appetit!
Tip
: The vegetarian gnocchi pan with green asparagus can be wonderfully garnished with grated Parmesan and some fresh parsley and served with a large, mixed salad.
