  • 1 onion

  • 1 clove of garlic

  • 150 ml cream

  • 100 ml vegetable broth

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • Some nutmeg (ground)

  • Salt and pepper

  • Optionally some parmesan for garnish

You can cook this vegetarian spring dish so quickly

  • For the gnocchi and asparagus pan, first peel and finely dice the onion and garlic. Wash the green asparagus thoroughly, remove the wooden ends and cut the spears into bite-sized pieces.

  • Briefly sauté the onion in a large pan with a little olive oil. Now add the asparagus to the pan and let both fry over medium heat for a few minutes. Then mix in the garlic.

  • Pour the mixed vegetable broth and cream over the vegetables and season the sauce with a little lemon juice, salt, pepper and nutmeg. Let everything simmer for about five minutes.

  • Meanwhile, fry the gnocchi in a little olive oil. Finally, add the gnocchi to the sauce and stir well. Garnish with a little grated Parmesan if desired. Bon appetit!

  • Tip

    : The vegetarian gnocchi pan with green asparagus can be wonderfully garnished with grated Parmesan and some fresh parsley and served with a large, mixed salad.
