Fluffy buns like grandma's - the popular classic can be served wonderfully plain and dusted with a little powdered sugar, with jam and a dollop of whipped cream or with a homemade vanilla sauce. If you decide on the fruity version, you can fill the small yeast balls with a little jam of your choice before baking, or then cut them in half and enjoy them like a breakfast roll with a sweet spread.

Yeast pastries in all colors and shapes are particularly popular during Easter. Wheat flour (Type 405)
80g sugar
80 g butter (soft)
200 ml milk
2 eggs (M)
1/2 cube fresh yeast (about 20 grams)
1 teaspoon lemon zest
2 packets of vanilla sugar
pinch of salt

You can bake this sweet classic so quickly
To make the yeast dough, first slowly warm the milk in a small saucepan. Mix the flour, sugar, vanilla sugar, a little lemon zest and a pinch of salt together in a large mixing bowl. Crumble the fresh yeast into a separate bowl and pour the lukewarm milk over it. Stir gently until the yeast is completely dissolved. Add the yeast milk together with the soft butter to the dry ingredients.
In the next step, separate both eggs and add the yolks to the mixing bowl. The protein is not needed for the Buchtels. Now knead all the ingredients into a smooth, supple dough. Then cover and leave to rest in a warm place for about an hour.
Grease your baking dish thoroughly with a little butter. Form about twelve balls of the same size as possible from the risen dough and place them in the greased baking dish. The buns must now be covered again and left in a warm place for around 30 minutes. Meanwhile, preheat the oven to 180 degrees top and bottom heat (alternatively: 160 degrees fan).
Finally, the buchtels are baked for about 30 to 35 minutes in the preheated oven until golden brown. Remove and let cool or enjoy while still warm from the oven. Optionally garnish with a little powdered sugar. Bon appetit!
