Of course, hearty culinary delights should not be missing. In addition to hearty ham and spicy cheese, homemade meat salad with mayonnaise and a vegetarian tomato and mozzarella spread provide variety. Graved salmon with beetroot on fresh bread and refreshing raw food platters with spring vegetables round off the offering.
To top it all off, there are fluffy herb pancakes with a poached egg – the icing on the cake. The delicate pancakes have an incomparable flavor from fresh herbs such as parsley, chives, dill and basil. The poached egg on top ensures a wonderfully creamy consistency and makes this dish a real eye-catcher - even without a flash hollandaise sauce, as is the case with Eggs Benedict with green asparagus.

Hearty pancakes with herbs and egg are easy to make thanks to these preparation instructions:
For the herb pancakes:
Separate the eggs. Beat the egg whites until stiff with a hand mixer. Put aside.
Sift flour into a separate bowl. Add salt, pepper, garlic, sugar, milk and egg yolks and mix well. Add herbs and carefully fold in egg whites.
Heat oil in a pan and bake pancakes from the dough in batches over medium heat. Keep the finished pancakes warm until ready to eat.
For the poached eggs:
Pour 300 milliliters of hot water into a small bowl. Crack in the eggs one at a time and cook in the microwave at 750 watts for 50 seconds. Depending on the desired degree of hardness, let it set in the microwave for a shorter or longer time.
Remove the eggs from the water, drain and serve with the pancakes.
