For the yeast dough:

That's how quickly you can bake the classic cinnamon rolls

  • To make the yeast dough, first heat the butter and milk in a small saucepan over a low heat. Meanwhile, put the flour in a large mixing bowl and then crumble the fresh yeast over it. Once the butter has melted, the lukewarm butter-milk mixture is kneaded into the flour together with the sugar and a pinch of salt to form a smooth dough.

  • While the dough is covered and rising in a warm place for about an hour, you can mix the cinnamon filling. To do this, mix the soft butter with the sugar, vanilla sugar and cinnamon. After the resting time, roll out the dough on a floured work surface into a rectangle (approx. 60 x 30 cm) and spread it as evenly as possible with the cinnamon paste.

  • While the oven is preheating to 180 degrees top and bottom heat (alternatively 160 degrees fan oven), roll up the rectangle as tightly as possible from the long side. Cut the roll into approximately twelve equal, trapezoidal pieces. To do this, place a sharp knife at a slight angle and then turn it.

  • Now spread the divided pieces on the work surface with the shorter side facing up. Using the wooden handle of a wooden spoon, press the narrow side of the snail down slightly parallel to the cut surface. The wound sides are turned upwards, as shown in the video above.

  • Now place the finished French rolls on a baking tray lined with baking paper, leaving a little space between them. Place the covered tray in a warm place to rest for another ten minutes. Then brush the pastry with a little milk and let it bake on the middle rack in the preheated oven until golden brown, about 15 minutes. Allow to cool or enjoy while still warm from the oven.
