More than waste: three recipe ideas on how you can reuse lemon peel

Who says lemon peels have to end up in the trash? They're too good for that. You can use the leftovers cleverly with the following recipe ideas.

Lemons are an integral part of the kitchen. Whether for baking, cooking or as a refreshing drink: the citrus fruit has many uses. However, often only the juice is used and the rest ends up in organic waste. This is very unfortunate, because many great things can also be conjured up from lemon peel.

At the same time, you can do something about food waste. According to the

Federal Statistical Office,

almost eleven million tons of food end up in the trash every year. Private households are primarily responsible: 6.5 million tons of food waste is generated here. Each consumer throws away 78 kilograms of food every year. Instead of simply throwing away lemon peels, you can reuse them in clever ways. It is best to use organic lemons for this. Conventionally grown fruits often contain pesticides and other chemicals. These harmful residues, which are mainly found in the shell, must be avoided. You should also rinse organic lemons thoroughly with warm water before using. For the following three recipes, you should ideally only use the yellow peel of the lemon. The white skin underneath does not taste good due to its bitter aroma.

Reuse lemon peel: Tip 1. Lemon sugar

Ingredients:

  • 1 organic lemon

  • 40g sugar

    2. Idea for leftover lemon peels: lemon syrup

    Ingredients:

    • 2 organic lemons

    • 200g sugar

    • 200 ml water

    Preparation:

  • Peel the lemon with a peeler or cut thin strips with a knife.

  • Place the peeled pieces of peel in a pot.

  • Bring the lemon peels to the boil with the water and sugar.

  • Turn the heat down and simmer the mixture for about ten minutes, stirring occasionally. The sugar should completely dissolve.

  • Strain the syrup and let it cool.

  • The final step is to fill it into sterile bottles.

  • The lemon syrup will keep well closed and refrigerated for a few months. You can use it to sweeten drinks, refine desserts or as a marinade ingredient for meat and fish. Tip: To make homemade lemonade, simply mix one to three tablespoons of the syrup with a liter of cold water, either carbonated or non-carbonated.

    3. Make candied lemon peels yourself

    Ingredients:

    • 4 organic lemons

    • 200 ml water

    • 400g sugar

    Preparation:

  • Peel the peel from the organic lemons with a peeler.

  • Bring the lemon peel, water and 200 g sugar to the boil in a saucepan.

  • Let everything simmer for about 10 minutes.

  • Remove the pot from the heat and weigh down the lemon peels so that all the pieces are submerged. You can use a small plate for this, for example.

  • Cover and let the mixture sit overnight.

  • Add another 100 grams of sugar and repeat steps three to five.

  • Also add the remaining 100 grams of sugar to the broth. Let everything simmer again and let it soak overnight.
