Ingredients (for 4 people)
- 2 smoked herring fillets
- 1 stem of fresh garlic
- 25 cl of liquid cream
- 3 sprigs of tarragon
- 2 small cucumbers
- Half a teaspoon
- of four spices
- 1 dash of Spanish vinegar of sherry
For the vinaigrette
- Olive oil
- Flower of salt and freshly ground pepper
Preparation of the recipe
1. Rinse the cucumbers. Wipe them and cut them into ribbons with a mandolin in the lengthwise direction.
2. Cut the herring into strips and the new garlic into julienne.
3. Season the cream with vinegar, fleur de sel and four-spice. Whip to obtain a creamy and dense texture.
4. Arrange cucumber, herring, fresh garlic and tarragon on plates. Season with olive oil, a pepper mill spin and fleur de sel.
5. Arrange with four-spice scented cream and serve.
