Ingredients

• • Bundle rocket
  • Turkish bundled spinach
  • Fresh courgettes
  • ½ cup fresh
  • ½ fresh capsicum
  • ½ medium purple onion
  • A handful of roasted almonds
• • Vietnamese salad dressing (to taste) - recipe below

Preparation

How to make a refreshing leaf salad?

• Rinse the leaves well with plenty of water and roughly chop all the leaves. Cut the onion into rings and roughly chop the almonds.

• Mix everything together in a bowl and season with Vietnamese sauce, if you want a more classic salad - you can season with salt, pepper, olive oil and lemon juice.

• Serve: White rice is recommended.
