Ingredients
- Bundle rocket
- Turkish bundled spinach
- Fresh courgettes
- ½ cup fresh
- ½ fresh capsicum
- ½ medium purple onion
- A handful of roasted almonds
- Vietnamese salad dressing (to taste) - recipe below
Preparation
Rinse the leaves well with plenty of water and roughly chop all the leaves. Cut the onion into rings and roughly chop the almonds.
Mix everything together in a bowl and season with Vietnamese sauce, if you want a more classic salad - you can season with salt, pepper, olive oil and lemon juice.
Serve: White rice is recommended.
