Sormani: the new boss has understood everything

A wind of success is blowing again on this great Italian.


In 2000, I experienced the great hours of Sormani . The restaurant was fully booked every evening and customers on the waiting list waited in a nearby bar, waiting their turn tasting the champagne offered by Pascal Fayet, the owner of the Italian restaurant. This era remains a great memory. Pascal has just sold his restaurant to Franck Potier-Sodaro, 35, sommelier and butler of the establishment. And, miraculously, the restaurant is again full. Sormani has retained its excellent chef and the butlers are still among the best in the capital.

We are in the truffle season. We remember the “black tide” (of truffles), which Pascal proposed. With Franck Potier-Sodaro, the tide has not gone away. And the truffle always darkens the plates. A wind of success is blowing again on this great Italian. Franck and his team know clients perfectly, their habits, their desires. Being pampered is not so common. A pleasure to dine in this warm place, decorated with a sure taste. With Franck Potier-Sodaro, cuisine and service retain the generosity desired by Pascal Fayet. You couldn't dream of a better successor.

For the past few days, the food has been top notch. Two particularly successful dishes: the sea urchin mini-shells, risotto style, and the exceptional large ravioli of Breton lobster, small vegetables and clam sauce. To start, do not hesitate to ask for an assortment of appetizers. For example, fine pizetta with candied onions, mozzarella and black truffle; mashed Charlotte potatoes, warmed with black truffle; raw scallops, buffalo picota with lime and Sologne caviar. For dessert, a soufflé with black truffle, vanilla ice cream. The menu is rich, unconventional, full of surprises. First-rate Italian wines. Franck Potier-Sodaro brilliantly revived Sormani. Tables of happy guests are back.
