Kaltenberg stone floor and wooden ceiling, a knight's armor at the entrance, white walls, red edged windows and massive furniture - the enlarged guest room is both historical and rustic. According to Prince Heinrich of Bavaria, it is also important to offer the guests "the great Kaltenberg medieval flair" not only during the knight tournament, but throughout the year.

The 34-year-old chose the Urban family of restaurateurs as partners for the company. Father Alexander ran the monastery in Andechs for a long time, son Michael runs the posh La Bohème restaurant in Munich-Schwabing. Both are now supposed to provide a breath of fresh air in the kitchen of the knight's swarm. According to Alexander Urban, this is done with regional products, "wherever you go with organic".

Vegan is part of Bavarian cuisine

Cooking is Bavarian with a lot of meat, for example venison ragout from a royal hunt, crusty roast or fillet from the Bavarian willow ox. "But you will always find vegetarian dishes here," Urban says. There are even supposed to be vegans. "This is also part of Bavarian cuisine, where after all there wasn't always meat."

Regular events are planned, both culinary and cultural. Folk music, Gstanzl singing, music cabaret, theater - Urban can imagine all of this in the Ritterschwemme. A former moderator and home expert from Bavarian Radio helps find artists.

The new Ritterschwemme was opened as it should be for Lent - with a strong beer tapping. At full tables, invited guests - including many local politicians and representatives of public life - watched how the Mayor of Geltendorf, Wilhelm Lehmann, tapped the first strong beer of the season with two strokes. "A nice healthy drink that takes us well through Lent," said brewing chief Prince Luitpold of Bavaria.
