Respiratory failure occurs 2 hours after eating

The Centre for Health Protection of the Department of Health stated that a 65-year-old man caught puffer fish in Hong Kong and cooked it for lunch at home yesterday (23rd). He suffered facial paralysis, general weakness and respiratory failure about two hours later.

He went to the Accident and Emergency Department of the Prince of Wales Hospital on the same day and was admitted to the intensive care unit of the hospital. He is now in critical condition.

Tetrodotoxin does not decompose during cooking

A CHP spokesperson explained that pufferfish consumption is the main cause of tetrodotoxin-induced food poisoning. Tetrodotoxin is a highly toxic water-soluble neurotoxin that can affect the central nervous system.

The spokesman added that tetrodotoxin is mainly concentrated in the liver, gonads and skin of puffer fish. Tetrodotoxin is a heat-resistant toxin and will not be decomposed during cooking, air drying or refrigeration. Tetrodotoxin poisoning can affect the respiratory and circulatory systems and can be fatal in severe cases.
